Omelette with feta cheese and vegetables

Serves 1


150g broccoli, cut into small florets

2 egg whites

1 egg yolk

2 tbsp water

light spray oil

30g light feta cheese (contains 30 per cent less fat)

pinch of salt and black pepper

How to prepare:

  1. Start by steaming your broccoli or alternatively boil it.
  2. Whisk egg whites with egg yolk and add water.
  3. Lightly oil a non stick pan. Heat pan to medium heat and pour in egg mixture. Cook until the egg becomes firm.
  4. Crumble feta cheese with a fork and sprinkle it in the middle of your omelette. Add a pinch of salt and pepper.
  5. Once omelette is cooked, turn on half over to melt the cheese.
  6. Serve with steamed broccoli.
