Frittata Breakfast Cups

1 tsp butter, for greasing a six cup muffin tin

6 eggs

3 slices black forest ham, fat removed and cut in small pieces

25g Salakis light sheep’s cheese, crumbled

5g fresh chives, chopped finely

Freshly ground black pepper

How to prepare:

  1. Preheat fan oven to 160C. Grease the muffin cups.
  2. Divide the ham pieces, chives and cheese between the muffin cups.
  3. Crack the eggs in a mixing bowl with a spout. Whisk the eggs and black pepper for 2-3 minutes.
  4. Pour the whisked eggs evenly between the muffin cups. Place in oven and cook for 12-15 minutes until set.
