Four Seasons pizza à la Eva

Serves 4

Ingredients:

Pizza dough

1/4 tsp salt

1 regular baking yeast sachet

200ml lukewarm water

1 tbsp olive oil

300g white flour

Tomato sauce

1 tsp olive oil

150g/ 1 onion, chopped

400g/ 1 (400g) can of chopped whole tomatoes

pinch of black pepper

1 beef stock cube

Filling

230g sweetcorn (drained weight)

200g cooked sliced ham, chopped

400g/ 4 tomatoes, sliced

100g/ 1 onion, sliced thinly

125g mozzarella cheese, grated

Salad

400g/ 4 carrots, grated

juice of 1 lemon

4 tbsp balsamic vinegar

How to prepare:

  1. To prepare the pizza dough: mix salt, yeast, water and olive oil in a bowl. Add flour slowly and mix with your hand to create a round ball. Cover the bowl with a clean tea towel and leave dough to rise in a warm place for 40 minutes.
  2. To prepare the tomato sauce: Heat oil in a non- stick saucepan or wok. Gently fry the onion first, and then add the can of tomatoes, black pepper and beef stock cube. Cover and simmer for approximately 3 minutes to create a thick sauce.
  3. Preheat oven to 200°c. Line a baking tray with grease proof paper. Sprinkle the baking tray with flour.
  4. Flour a table surface. Sprinkle some flour on the dough and place it on floured surface. Spread dough out with fingers.
  5. Use a floured rolling pin to a create a round pizza out of the dough. Use extra flour if needed when rolling. Roll the dough around the rolling pin and transfer to baking tray. Spread it out.
  6. Cover pizza with tomato sauce. Sprinkle with the sweetcorn, then the ham, tomatoes and onion, finishing with the mozzarella.
  7. Put in the oven for 10-15 minutes until the dough is cooked and cheese melted.
  8. To prepare the salad: Mix together the grated carrots and lemon juice and serve with balsamic vinegar.
  9. Add some spinach or basil to garnish (optional)
  10. Serve the pizza with the salad.
