Farmer’s Pie
Serves 4
Ingredients:
1 small white cabbage, shredded
200ml beef stock
500g lean minced beef
6 carrots, grated
1 onion, finely chopped
Freshly ground black pepper
6-7 medium potatoes, peeled and quartered
1 tbsp low fat milk
4 low fat Cheddar slices
How to prepare:
- Preheat oven to 180ºC/350ºF/ gas 4.
- Place the cabbage and stock in a large pan over a medium heat. Cover and simmer for 5 minutes, stirring occasionally.
- Add the beef, carrots and onion. Season with black pepper and stir well.
- Cover and simmer for 5 minutes, until the beef turns brown.
- Meanwhile, make the mash. Boil the potatoes in salted water for 10-15 minutes until tender. Drain, then mash well with the milk.
- Place the cooked mince into an ovenproof dish and top with the mash. Bake for the 15 minutes. Then add the cheese slices and bake for another few minutes, until the cheese has melted.
- Divide the pie between warmed serving bowls.
