Cowboy Stew

Serves 4


1 tsp olive oil

400g lean minced beef (or turkey)

1 green, yellow, red pepper finely chopped

400g sweet potatoes, peeled and grated

415g tin of baked beans

160ml low fat coconut milk

2 tbsp mild curry powder

2 tbsp soy sauce

1/2 tsp red chilli powder

How to prepare:

  1. Heat the olive oil in a large pan over a medium heat and fry the meat until browned.
  2. Lower the heat, add the peppers and cook gently until they have softened.
  3. Add the sweet potatoes, baked beans, coconut milk, curry powder, soy sauce and red chilli powder and stir well.
  4. Cover and simmer for about 20 minutes, stirring occasionally until vegetables are cooked through.
  5. Ladle the stew into warmed serving bowls.
