Chilli Pasta Bolognese

Serves 4


400g minced turkey

2 turkey rashers, sliced

1 large onion, finely chopped

2 celery sticks, diced

4 small courgettes, topped, tailed and grated

2 x 400g tins of whole peeled tomatoes

1/2 tsp chilli powder

1/2 tsp paprika

1/2 tsp salt

200g wholewheat fettuccine, tagliatelle or spaghetti

How to prepare:

  1. Heat a large pan over a medium heat (there is no need for oil).
  2. Add the turkey mince, turkey rashers and cook until beginning to brown.
  3. Add the onion, celery, courgettes, tomatoes, chilli powder, paprika and salt.
  4. Stir well and leave to simmer (uncovered) for about 20 minutes.
  5. Meanwhile, cook the pasta according to instructions on the package.
  6. Divide the cooked pasta between warmed bowls. Ladle the Bolognese on top and serve.
