Chilli Pasta Bolognese
Serves 4
Ingredients:
400g minced turkey
2 turkey rashers, sliced
1 large onion, finely chopped
2 celery sticks, diced
4 small courgettes, topped, tailed and grated
2 x 400g tins of whole peeled tomatoes
1/2 tsp chilli powder
1/2 tsp paprika
1/2 tsp salt
200g wholewheat fettuccine, tagliatelle or spaghetti
How to prepare:
- Heat a large pan over a medium heat (there is no need for oil).
- Add the turkey mince, turkey rashers and cook until beginning to brown.
- Add the onion, celery, courgettes, tomatoes, chilli powder, paprika and salt.
- Stir well and leave to simmer (uncovered) for about 20 minutes.
- Meanwhile, cook the pasta according to instructions on the package.
- Divide the cooked pasta between warmed bowls. Ladle the Bolognese on top and serve.
