Broccoli soup

Serves 4-6

Ingredients:

400g broccoli, chopped in florets

350g cauliflower, chopped in florets

200g/ 4 celery sticks, sliced

150g/ 1 leek, sliced thinly

100g/ 1 courgette, sliced

2 tbsp soy sauce

1 vegetable stock cube

1 litre boiling water from kettle

1-2 garlic cloves (according to taste)

pinch of white or black pepper

How to prepare:

  1. Place all vegetables in a large saucepan. Add soy sauce and stock cube dissolved in 1 litre of boiling water from kettle.
  2. Add garlic and a pinch of white or black pepper or according to taste.
  3. Bring to the boil. Then simmer approximately 20 minutes until vegetables are soft.
  4. Liquidise if preferred.
