Breakfast muffins with cafe latte

Ingredients:

150 g wholemeal flour

110 g unprocessed bran

100 g dried apricots, finely chopped

1 tsp bicarbonate soda

1 tsp ground cinnamon

1 tsp ground nutmeg

1 egg, beaten

4 tbsp low calorie sweetener

2 tbsp hazelnut oil

1 tsp natural vanilla extract

185 ml full fat milk

Latte

100 ml water

200 ml low fat milk

1 tsp coffee (or to your taste)

How to prepare:

  1. Preheat fan oven to 200 C
  2. Mix all dry ingredients together, making sure the apricots are finely chopped. Try to use apricots that have a little moisture in them, e.g Shamrock
  3. Combine wet ingredients with the dry ingredients
  4. Place 8 muffin cases on a muffin tray and spoon the mixture into the cases
  5. Bake for 15 minutes or until skewer comes out clean
  6. Cool on a wire rack
  7. Serve with your own homemade latte. Make your coffee with hot water and hot milk.

Approx 250 calories for 1 muffin and 1 cafe latte
