Blue Corn Nachos

Ingredients:

250g steak mince

60g Old El Paso blue corn nachos

60g Low-low grated mozzarella and cheddar cheese

1 red onion, chopped

1 yellow pepper, chopped

1 red pepper, chopped

2 cloves of garlic, crushed

10 jalapeno rings

4 tbsp salsa

15ml soy sauce

15g coriander, chopped finely

250g bag pre-washed iceberg lettuce

3 tomatoes, chopped

How to prepare:

  1. Preheat fan oven to 180C. Line an oven tray with greaseproof paper.
  2. Spread nachos over the oven tray, and set aside.
  3. Fry mince, onion and garlic in a non stick pan. Add salsa and peppers, and cook for 3-4 minutes until meat is cooked.
  4. Add jalapeño rings, soy sauce an coriander.
