Baba Ganoush

Serves 4

Ingredients:

1 aubergine

1 tbsp dark tahini

1 tbsp lemon juice

1 tbsp chopped flat leaf parsley

1 garlic clove, crushed

1 pinch of cumin, salt and chilli powder or smoked paprika

How to prepare:

  1. Pre-heat oven to 200ºC.
  2. Prick the aubergine with a fork. Place aubergine on a baking tray and cook it for 40-60 minutes, until tender.
  3. Remove from oven and leave to cool down.
  4. Once cool, cut aubergine in half lenghtways. Scrape out the flesh and place it into deep dish.
  5. Add rest of the ingredients and pulse with a hand blender for a smooth consistency.
