Baba Ganoush
Serves 4

Ingredients:
1 aubergine
1 tbsp dark tahini
1 tbsp lemon juice
1 tbsp chopped flat leaf parsley
1 garlic clove, crushed
1 pinch of cumin, salt and chilli powder or smoked paprika
How to prepare:
- Pre-heat oven to 200ºC.
- Prick the aubergine with a fork. Place aubergine on a baking tray and cook it for 40-60 minutes, until tender.
- Remove from oven and leave to cool down.
- Once cool, cut aubergine in half lenghtways. Scrape out the flesh and place it into deep dish.
- Add rest of the ingredients and pulse with a hand blender for a smooth consistency.
